I am a huge fan of Peruvian coffee, with its signature low acidity, a big aroma, and a really complex flavor profile. Unfortunately, the Really Good Coffee Company Peruvian light roast missed the mark under my normal brew, methods in the first round.I brewed this single-origin coffee using four different methods.1. OXO 8 cup Dripper which is basically an automatic pour-over machine. (Percolation)2. Hario V60 Pour Over. (Percolation)3. Clever Dripper. (Immersion like a French Press or the AeroPress)4. Mason Jar Cold Brew concentrate. (Immersion)My ratio is 60grams of coffee per liter of water which equated to 1:16 for those of you that live by ratio brewing. This is considered a normal-strength cup of coffee.Using this ratio, the coffee was weak, very little aroma, and lacked any real flavor.Deciding to not give up and 1star this coffee I went deeper down the rabbit hole of brewing a GOOD if not GREAT cup of coffee.This coffee finally came to life using the Hario V60 and the Clever Dripper with a 1:14 ratio which equates to 71.43 grams of coffee per liter of water which is just under what is considered Strong. Which is stronger than where I want to really enjoy my coffee.Once there I was able to pull the flavor and aroma that I expect from Peruvian coffee. I have other Peruvian coffee that is all that I expect at my normal brew ratio and that left me questioning the value of this coffee.That is the main reason for the 4star rating. I had to use more coffee to achieve the flavor profile that I have come to expect from all other Peruvian coffees I have brewed.This large 2lb bag of Seattle roasted Real Good Coffee is an organic, single origin whole bean arabica coffee sourced from Uganda. These aren’t oily beans, which is good for my needs as I mostly use a super automatic machine for brewing espresso and oily beans will ruin my grinder. These beans arrived fresh with a nice sheen and aroma. This is a medium roast good for brewing coffee or espresso.These beans brew a medium bodied coffee or espresso that’s flavorful with fruity and caramel notes. I brew my espresso and coffee strong so results may vary, but I find this bold brewed as espresso with some pleasant bitterness and medium acidity so this isn’t dull or flat. I’ve decided I usually prefer a good balanced blend to single origin coffee, but this espresso is good with steamed milk for an enjoyable latte. Like it. 4 stars.This is a nice medium roast coffee, it has a great aroma when opening the bag but not much while brewing. It has a nice flavor with no bitterness and low acidity. I like that it is organic and fair trade certified.I enjoy coffee on an almost daily basis, usually three cups a day, but I would not consider myself anything like an expert on the brew. It's all pretty simple for me: if it tastes anywhere near as good as it smells while it's brewing, I'm happy with it. And, this Peruvian medium roast from Real Good Coffee Company does exactly that.The coffee has a strong, enticing aroma while brewing, and its taste is almost as good as its smell (if I ever find a coffee that actually tastes as good as it smells to me, that's the one I'll stick with forever more). I used the medium setting on my coffee grinder, and I was pleased with the result. No bitterness or nasty aftertaste at this grind-setting at all. I could easily drink this coffee every day for a long time.I've rated the coffee at four stars rather than five only because it's not a GREAT coffee when it comes to matching more perfectly my particular taste buds. But just as the company name says, this is "Real Good Coffee" for sure, and it's one I would recommend to friends and family.Equipment: freshly cleaned Cuisinart burr grinder set to coarse grind, Cuisinart 14-cup drip coffeemaker.Some of our favorite coffees have come from Peru so this was certainly worth a shot. It's a light roast.A peeve of mine is any bean that grinds like styrofoam, all static-y, little bits flying everywhere when you take the cover off the grinder's hopper. There was a touch of that with these beans, but not bad.Overall good flavor, no bitterness, not acid, and definitely a good-tasting, quality coffee. Just not... Special. Or perhaps not special enough, compared to the other coffees I've had.Would I happily drink this every day for the rest of my life? Sure. And it would be markedly better than every coffee I drank in my youth. But doesn't stand out as a top three. Top 10 maybe.
