Hard red winter and spring wheat, higher in protein than soft wheat, are ideal for all-purpose flour and yeast breads. To cook one cup, soak overnight, drain, add four cups water, boil, then simmer 45-60 minutes, yielding two cups. The journey began at the Vetter family farm in 1953, when Don Vetter pioneered organic farming. His son David returned in 1975, and together, they certified the farm organic in 1978, forming The Grain Place, Inc. Today, Grain Place Foods, based in Marquette, Nebraska, is a thriving business committed to sustainable and responsible grain production.
